The process by which a solid forms, where the atoms or molecules are highly organized into a structure known as a crystal.
In confectionery, this is often something to be avoided (like in smooth caramels) or carefully controlled (like in fudge).
The story behind the word. The word comes from the Greek 'krystallos', which originally meant 'ice'. The Greeks believed that rock crystal (clear quartz) was ice that had frozen so hard it would never melt. Eventually, the term was applied to any solid with a regular, repeating internal structure.
