A complex chemical reaction between amino acids and reducing sugars, usually requiring heat, that results in food browning and the creation of deep, savory flavors.

Unlike simple caramelization which only involves sugars, this reaction requires proteins (amino acids) and produces hundreds of complex flavor compounds responsible for the smell of roasted coffee, seared steak, and baked bread.

The story behind the word. In 1912, French chemist Louis-Camille Maillard was trying to replicate protein synthesis in his laboratory. Instead, he mixed sugars and amino acids in a test tube and heated them, observing a rich brown mixture with a remarkably savory aroma. Though he published his findings, their profound significance to food science and culinary flavor was not fully realized until decades later.
