To seal food in packaging after removing all air, or a package sealed in this manner.

A specific type of atmospheric control where the primary goal is the complete removal of air (and thus oxygen) to inhibit aerobic spoilage.

The story behind the word. The concept of a vacuum (an empty space) was fiercely debated by ancient philosophers, but in the 19th century, industrial pumps made vacuums practical. By the mid-20th century, flexible plastics allowed manufacturers to draw air out of food containers, collapsing the plastic tightly around the food to create the first vacuum-packs.
