sommelier
suh-muhl-YAY
/sɒˈmɛljeɪ/
A trained and knowledgeable wine professional, typically working in fine restaurants, who specializes in all aspects of wine service and food pairing.
It denotes a high level of expertise, certification, and hospitality, rather than just a standard waiter who serves drinks.
The story behind the word. In medieval France, a 'sommelier' was a pack-animal driver in charge of transporting the royal court's provisions and baggage ('somme'). Over time, the person in charge of the baggage became responsible for securing the food and wine, eventually evolving into the specialized cellar master we know today.
